K's porridge


These days, Kaeden's daily diet consists of porridge or cereal and a little fruit besides breastmilk. I like to feed him rice porridge cooked with vegetables and minced meat or fish on alternate days. Usually each time I cook, the quantity is about 2 baby portions so I'll keep one portion in a thermal pot to keep warm for K's dinner.

One of the porridge recipe which I think K has taken a liking for is the cauliflower + whitebait rice porridge. I find that the whitebaits sold here tend to be salty so I'd have to rinse a few times and soak them to remove the salt before using them.

Ingredients:

1 tbspn rice
+/- 400ml water
1 tbspn whitebait
1 handful cauliflower, florets only
1/2 tspn light soy sauce (optional)

Method:

In a pot, soak the raw rice in water for 2 hours.
Put the pot of rice+water to boil and then lower the fire to simmer the contents for 10 min.
While it's simmering, chop the whitebait finely and marinade with soy sauce.
Chop the cauliflower finely.
Add in the chopped whitebait into the cooking porridge, simmer for 10 min.
Add in the cauliflower, simmer for another 10 min.
After which, use the back of a ladle and mash the contents till the desired texture.
